Every PAZZI pizza begins with the expertise of Thierry Graffagnino, a distinguished figure in the world of pizza-making. With over 40 years of experience, Graffagnino has achieved significant recognition, including winning the World Pizza Championship three consecutive times in 2011, 2012, and 2013.
Born into a Sicilian family with a rich culinary heritage, Graffagnino started his career as a pizzaiolo at the age of 17. His passion for the craft led him to become a consultant in 2006, working with chefs, manufacturers of professional restaurant equipment, and agro-food specialists.
In addition to his consulting work, Graffagnino has served as the President of the French Pizzaiolo Federation and currently leads the World Institute of Pizza. In this role, he trains over a hundred pizzaiolos annually and advises producers and manufacturers of pizza machinery, ranging from artisans to corporate groups.
At PAZZI, Graffagnino is more than just a name behind the recipes. Complementing the dough is our exclusive tomato sauce, created through a direct collaboration with Cirio, one of Italy’s most respected tomato producers. Working closely with Cirio’s team, our chef personally selected the tomato varieties and oversaw the development of a recipe made specifically for PAZZI. The result is a sauce that offers the perfect balance of freshness and richness, designed to enhance every recipe on our menu while delivering a distinctive, consistent taste across all locations.
To complete the experience, we rely on Individually Quick Frozen (IQF) toppings that preserve the full flavor, texture, and nutritional value of each ingredient. From vegetables to cheeses and proteins, IQF technology ensures freshness and food safety while allowing our kitchens to maintain the same high standards with every order, around the clock.
