Every new beginning has its past: PAZZI’s journey from Paris to Zurich

In the fast-evolving world of quick-service restauration (QSR), PAZZI stands out with its groundbreaking approach that redefines the rules of convenience. Born from a passion for both food and technology, PAZZI was founded on a bold mission : to revolutionise the fast-food industry through robotics. What began in Paris as an ambitious idea has now become a reality:  fully autonomous pazzirias where state-of-the-art robots handle everything from order placement to pizza crafting and serving, making high-quality, traditional pizzas more accessible.

How can robotics transform the QSR industry?

The QSR industry faces growing pressure to balance speed, efficiency and quality, all while navigating persisten operational challenges. Labour shortages – especially for late-night shifts- lead to high turnover rates and costly retraining, making staffing a constant concern. These difficulties often result in high financial losses highlight the industry's ongoing struggle to maintain operational effectiveness.

At the same time, evolving consumer expectations demand healthier, more transparent menu options, pushing restaurants to adapt their offer and to adapt to rising hygiene and food safety regulations.

In response to these challenges, there is a growing shift towards automated solutions, with robotics playing a pivotal role. They automate repetitive tasks, ensure consistent quality, alleviate the strain on human workers, and boost operational productivity. Robotics also uphold production standards, minimize errors and enhance hygiene levels by minimising human contact with food.

PAZZI takes it a step further: our fully autonomous kitchens deliver delicious, tradition-inspired pizzas in under five minutes, 24/7. A seamless blend of culinary heritage and technological excellence ensuring that high-quality food is available whenever and wherever it’s needed – without compromise.

Navigating Challenges: Lessons from PAZZI’s Early Journey

When PAZZI first launched in Paris in 2019, it introduced a revolutionary dining experience that captivated both customers and industry experts. In 2022, PAZZI was honoured with the prestigious Food-Tech Innovation Award, highlighting PAZZI’s contribution to advancing food automation; this accolade reinforced PAZZI’s role in shaping the future of quick-service dining and redifining what “fast-food” should be, setting new standards for quality, efficiency, and customer experience.

Yet the path to innovation is rarely smooth. The economic impact of the COVID-19, coupled with shifting social and market dynamics, created unforseen obstacles. After carefully assessing these challenges, PAZZI made the difficult decision to close its pilot locations and restructure operations. While this market a diffuclt milestone, it also provided valuable insights, fueling a renewed commitment to refining our concept, our business model, and ensuring a sustainable, longterm vision for the future of automated dining.

A new beginning in Switzerland

Every new chapter is written with lessons of the past, and for PAZZI, those experiences have been the strong fundation for new opportunities. Under new ownership, PAZZI has relocated to Zurich, Switerland, where it continues to refine and enhance its revolutionary concept. The lessons learned from the initial ventures have shaped a new strategy focused on scalability, sustainability, and 24/7 accessibility.

With a renewed vision focused on growth, PAZZI is set to expand across Europe and the Middle-East, with several new locations planned to open in the coming years. This expansion will be driven through a Master Franchise Model, allowing local entrepreneurs to bring the PAZZI experience to their communities in different countries. Along with this strategic shift, PAZZI has embraced a fresh brand identity, combining retro-futuristic elements with modern design to create a unique and memorable experience.
