No great pizza is complete without an exceptional tomato sauce. That’s why PAZZI has partnered with Cirio, one of Italy’s most iconic tomato producers, to ensure every pizza carries the true essence of Italian cuisine.
Founded in 1856 by Francesco Cirio, the company rpioneered tomato preservation, making sun-ripened Italian tomatoes available all year round. Today, Cirio collaborates with over 14,500 local farmers across Italy’s most fertile regions; Their dedication to sustainable agriculture and traditional methods ensures that only the finest produce makes it into Cirio products.
To create a bespoke sauce worthy of PAZZI’s high standards, Thierry Graffagnino, our three-time world pizza champion, personally visited Cirio’s production sites in Italy, selecting the perfect tomato varieties and overseeing the recipe development. The result? A rich, aromatic sauce that enhances every pizza, delivering the depth and authenticity of true Italian flavour whilst creating a signature taste for PAZZI pizzas.
In a fully automated kitchen like PAZZI’s, preserving ingredient quality is not just important—it’s essential. That’s why PAZZI uses Individually Quick Frozen (IQF) technology for all our toppings.
IQF is a method where each ingredient —whether it's vegetables, cheese, or meats—is frozen individually at extremely low temperatures, shortly after harvest or preparation. This rapid freezing process prevents large ice crystals from forming, preserving the food’s natural texture, flavor, and nutritional value and maintaining perfect freshness when thawed and cooked.
IQF technology ensures maximum freshness; it also guarantees perfect portion control, allowing our robotic system to handle each topping with absolute precision. Additionally, IQF provides an extended shelf life, minimizing food waste and ensuring consistent ingredient quality over time. Just as importantly, it enhances food safety, with strict handling and sterilization processes that meet the highest hygiene standards from source to serving.
But before any IQF ingredient is approved for a PAZZI recipe, it undergoes rigorous testing in Chef Graffagnino’s lab – only the best make it onto our pizza! Each product is carefully tested for taste, texture, and resilience, ensuring it meets our high standards. After that, the ingredients are evaluated in live production with our robots to ensure flawless integration into the automated process.

Every PAZZI kitchen is equipped with a high-performance stone baking system, ensuring that each pizza is cooked to perfection. The stone surface distributes heat evenly, allowing the dough to rise properly while creating the signature golden, crisp crust with just the right amount of char—reminiscent of traditional Italian pizzerias.
